A simple salad can be perfect. Try these:
- Butter lettuce, leaves washed and torn, dressed with a little extra virgin olive oil, white wine vinegar and a little good salt and pepper
- Juicy tomato slices topped with slices of bocconcini and basil leaves, drizzled with olive oil and sprinkled with good salt and pepper
- Wedges of watermelon topped with crumbled fetta cheese and torn mint leaves; add freshly ground black pepper if desired
Scared of salad dressing? Don’t be.
Take a small jar. Add good extra virgin olive oil then half the quantity of lemon juice or vinegar (ie. if you use 100 ml oil, add 50 ml acid). Add a teaspoon of mustard, a pinch of salt and a good grind of pepper. Put the lid on the jar. Shake it. Taste the dressing and adjust with more vinegar, salt, mustard or whatever!
