Chatting gimmicky food on ABC News Breakfast, October 10th, 2016.
Every few weeks I drop in to ABC News Breakfast to chat about what’s happening in the food world. This time it was to chat about why hipster food has gone viral — and when it will end.
We picked up the same topic in this article about freakshakes, ethereal ice cream and flowers scattered over food. As I say, presentation is always going to be important but it has to be balanced.
“We want things to look pretty and we want to eat with our eyes as well as our taste buds, but presentation overwhelming taste is going to slowly fade,” says Valent. “So what we’re going to see next is cafes starting to strip things back, which is already happening in fine dining. People are coming back to this idea that it needs to delicious, that needs to be the first thing.”
