I love dropping into ABC Radio Melbourne to chat about what I’ve been eating, cooking and learning. This time, the host was Dilruk Jayasinha, a comedian and carb-lover who is trying to eat low carb six days a week so he can have a blow-out seventh cheat day. We chatted a lot about cauliflower in this segment – it’s a favourite of the low-carb community. I love it because it’s delicious!
- Cauliflower Rice – a delicious side or a vegetarian main course
- Cauliflower-Crumbed Schnitzel – a genius vegetable crumb that is also gluten-free
- Cauliflower Hummus with Spiced Beef – Shane Delia – oooh so good and so tasty, though it does have not-so-low-carb chick peas
- Egg In A Jar – make it with cauliflower mash instead of potato
