One of the best and most flexible vegetables for anyone trying to eat less meat is the humble cauliflower.
- We speak about how to cook a cauliflower so it can be carved like a hero Sunday roast. Here’s Israeli chef Eyal Shani’s method: “Boil it in salted water till it’s medium soft. Set it aside to steam dry. Moisturise it with olive oil with your hands. Sprinkle it with salt. Bake it in a very hot oven, around 220C or hotter, until it’s golden brown. That’s all.”
