I am always looking for ways to incorporate seasonal fruit and veg into my daily delights. At the moment, I am loving adding mandarins to my morning green smoothies for extra winter zing. Mandarins bring sweetness and their special floral fragrance as well as their lovely citrus flavour.
Makes: 4-6 portions
Time: 5 minutes
Ingredients
- 300 grams (10.5 oz) coconut water or water
- 250 grams (8.8 oz) watermelon, cut in large chunks
- 3 mandarins, peeled (if there are lots of pips, squeeze them out)
- 1 pear or apple, halved
- 1 big handful baby spinach leaves or leaves pulled from 3 stalks kale
- 2 cm fresh ginger
- 100 grams (3.5 oz) ice cubes
Method
1. Place all ingredients in mixing bowl and blend 1 min/speed 10, or place in a blender and blitz until smooth. Serve straight away for that winter zing!
Tips
- Add more water if a thinner consistency is desired.
- Apple or pear don’t need to be peeled or cored.
- Extra smoothie can be stored in a jar in the fridge and shaken before serving.
